Calf-First Milking

We imagined Ghee elevated
to its highest standard.

Ghee, at its highest form, is not just clarified butter. It is a structured lipid matrix — carrying short-chain fatty acids, fat-soluble vitamins, and aroma compounds shaped by the animal, the milk, the culture, the churn, and the heat.

Every animal lives under deep 🤍, calm handling and continuous care from people trained to understand their comfort, emotions and natural bonds.

Hari has spent almost his entire life around animals and wildlife — especially cattle, goats, camels, and snakes.

At Uppermost Farms®, he brings this lived experience into understanding the emotional comfort of animals, becoming a quiet bridge between the human and animal world.

Dharam carries nearly 28 years of experience with cattle.

At Uppermost Farms®, he manages the daily rhythm of care — feed, walks, body condition, oiling, massage, and close physical observation. He helps ensure every animal is not just fed, but kept comfortable, active, and cared for with attention.

Stress leaves an imprint — in the body, in the milk, and ultimately in the Ghee.

Modern Science

True Vedic ghee takes time, precision, and craftsmanship. The process is slow by design, with every detail watched closely.

01

Step 01 — Milk Origin

We begin with lineage-selected Pure Gir cows and Murrah buffalo raised under our Botanical 36™ nutrition protocol and milked through a calf-first ethical rhythm.

MURRAH

YOUNG BOVINE

Step 02 — Milk Selection & Testing

Each milk batch is tested for compositional integrity - SNF (nutrient portion of milk beyond fat and water), lipids, proteins, minerals, enzymes, vitamins, and key minerals including calcium, potassium, and sodium.

02

03

Step 03 — Slow Milk Heating

Heating milk in red clay earthen pots adds an earthy aroma and fuller texture. Dried cow-dung cakes burn slowly with steady heat, not a harsh flame. Over 6–8 hours, the smoky-earthy environment settles into the milk. Gir cow milk moves towards a deeper golden-red shade, while Murrah buffalo milk settles into a softer light-golden finish.

*We have our pots manufactured to ensure clay purity and meet our customised requirements.

Step 04 — Curd Setting

Milk is set into curd using natural culture in black clay earthen pots. Black clay retains heat for longer, creating a stable environment for slow fermentation. This is where milk begins becoming ghee— not mechanically, but biologically.

04

05

Step 05 — Bilona Churning

The curd is churned using a wooden bilona made from neem tree wood. This traditional churning done at 60-80 bilona-rotation/ minute separates white butter aka 'makkhan' slowly—without force. Higher RPM's strip molecules of it's character.

Step 06 — Final Red Clay Heating

The extracted butter is finally heated again in red clay vessels. This stage removes residual moisture and allows aroma, texture, and fat structure to settle into their final form— Ghee.

Free-Fatty-Acid

below FFA limit

FFA limit is NMT 2.0.

Gir shows 0.56%, around 3.6× below the limit. Murrah shows 0.16%, around 12.5× below the limit.

lower cholesterol

than 1 egg

One large egg has about 186mg cholesterol, so Murrah is roughly lower, and Gir roughly 3.7× lower than one egg. Mayo Clinic lists one large egg at about 186mg cholesterol

2.5x

Omega-3

source threshold

The FSSAI “source of Omega-3” threshold for ALA is 0.3g / 100g, and the “high” threshold is 0.6g / 100g

Murrah Buffalo Ghee shows 0.825g Omega-3 / 100g.

10

Omega-3 like

cups raw spinach

Raw spinach carries about 0.041g Omega-3 per cup. Here, 1 cup = 30g raw spinach, not a drinking cup.

Murrah Buffalo Ghee carries approx 0.413g Omega-3 in 50g.

47%

Adult Vitamin-A

RDA

A 50g serving delivers ~ 43–49% of adult Vitamin-A Daily Value, based on the 900 mcg adult DV reference.

~4

Vitamin-A like

Glass of Milk

A cup/glass of whole milk is commonly around 244g; depending on reference, Vitamin A sits around ~100–112 mcg per cup.

50g Uppermost Ghee is roughly comparable to about 4 glasses.

5

Vitamin-A equals

Eggs

One large egg carries about 80 mcg Vitamin A, making nutrition = eggs.

Our Cow report shows Vitamin A at 769.36 mcg/100g, and Buffalo shows 786.36 mcg/100g. Egg reference shows 80 mcg Vitamin A per 50g egg

MUFA

like an

Avocado

Uppermost Ghee carries approx 13.5–15g MUFA in 50g.
That is close to the monounsaturated fat found in a medium avocado.

~2

Vitamin-E like

Cups of Broccoli

Raw broccoli has about 0.78 mg Vitamin E per 100g, so Uppermost Ghee gives Vitamin E roughly comparable to nutrition = ~2 cups of broccoli. Our reports show Cow Ghee Vitamin E at 2.59 mg/100g and Murrah Buffalo Ghee at 3.02 mg/100g. Broccoli data shows 0.78 mg Vitamin E per 100g

Up to

20% Vitamin-E RDA

A 50g serving gives approx 1.30 mg Vitamin E in Gir and 1.51 mg Vitamin E in Murrah.

~4

Energy like

bananas

A you'll 50g serving of Uppermost Ghee carries approx 449 kcal. One medium banana has about 105 kcal, so this is roughly comparable to 4 bananas in energy. Cow Ghee shows 897.84 kcal/100g, and Buffalo Ghee shows 898.47 kcal/100g. USDA/FatSecret lists one medium banana at about 105 kcal
